Try this delicious grain, gluten and lactose free Banana Bread . It is great for a sweet snack that doesn’t have much sugar and a good way to use those older bananas.
Ingredients
- ½ cup coconut flour
- ½ cup almond flour (for a nut free version use tapioca flour)
- 1 cup very ripe bananas mashed well (2 -3 medium bananas)
- ½ cup of either melted coconut oil, melted butter or olive oil
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 tablespoon of either honey, maple syrup, rice malt syrup or coconut sugar
- 4 eggs
- ½ teaspoon vanilla extract
- Pinch sea salt
Method
- Preheat oven to 180 and grease a loaf pan
- Combine coconut flour, almond flour, cinnamon, baking soda and salt and mix with fork to reduce clumps
- In another bowl add eggs, vanilla extract, honey (or sweetener of choice) and whisk. Add mashed banana and whisk until well combined
- Pour wet ingredients into dry ingredients and stir until thoroughly combined. Add melted butter / oil and continue stirring until well incorporated
- Spoon batter in pan, bake for 45 – 50 or until toothpick comes out clean when pierced. (I often bake for 30mins then cover with al foil to prevent top from going too dark)
